Cook N Class: Sushi

Sushi Sandwiches

Scrolling through the T.V. channels one morning, I stumbled across a Today Show segment featuring Martha Stewart. She was making creative back-to-school food ideas for kid’s lunches. I thought this recipe was especially clever. And seeing as how I had an entire loaf of bread handy, I decided to make use of it before it starts to spoil.

Ingredients I had on hand:

  • Bread slices, flattened
  • Cucumbers cut into thin strips
  • Cream cheese cut into thin strips
  • Turkey lunch meat
  • Cheese cut into thin strips
  • Mayonnaise
  • Ranch for dipping
  1. Flatten bread slices with a rolling pin. (Since I do not own a rolling pin, I used the side of the mayonnaise jar.
  2. Spread a thin amount of mayonnaise onto bread, making sure the edges are covered, this will help seal the “roll” together.
  3. Arrange cucumbers, cream cheese, turkey, and cheese in small amounts in the center of the bread.
  4. Roll bread into tight sushi roll, then cut into 4 pieces.

I served this with ranch dip and creamy Italian salad dressing and a side of apple slices. I made several rolls for my husband and myself.

This was really fun to make and a good way to use up the bread before it goes bad. To see the original today show segment, click on the photo at the top of this post for follow this link  here.
